- 1 box of macaroni noodles (3 cups)
- 1/4 cup of butter
- 1/4 cup of flour
- 2 cups of milk
- 1 package of shredded sharp cheddar cheese (2 cups)
- 1 can of condensed tomato soup
- 1 tsp of kosher salt
- 1/2 tsp of cracked black pepper
- 1 tsp of powdered mustard
Boil your macaroni noodles in salted boiling water till al-dente. Meanwhile in a sauce pan melt the butter and whisk in the flour and stir for a minute, slowly add your milk and whisk constantly. This roux will thicken and bubble. Whisk in your salt, pepper, mustard powder and can of tomato soup. Simmer for another few minutes then turn off the heat. Add your package of cheese and stir into the roux. Set aside with cover on.
Once your macaroni is cooked, drain and return back to pot and add your cheese sauce and stir together. Now if your kids like crunchy toppings (mine do not) then you can place in a buttered casserole and add some buttery bread crumbs and extra cheese on top and throw in a 425 degree oven till the top is browned. My kids like just plain jane cafeteria style creamy mac and cheese.
Serve immediately as it will thicken and set with time. I sometimes reserve a bit of starchy cooking water to add to the mac and cheese to thin it out, if it gets to thick.
