As you know I love to cook!! I recently bought a tortilla press and a cast iron skillet for making tortillas homemade!! I bought some Masa flour and it was so super easy!!! Gluten free too!
You can try this by using a rolling-pin instead, between two sheets of plastic.

- 2 cups of masa
- 1 1/3 cups of water
- pinch of salt
Stir this up till it is clumpy. Turn out on to the counter, and knead dough till it holds together and is soft. If dry add a bit more water. Literally you only need to knead for a few minutes! Place in fridge for 30 minutes to firm up.
Then use small balls of dough and press till it is a flat disc. Cook in a medium high, dry cast iron skillet till lightly golden on both sides.
I used queso fresco cheese this time. Yum! I also marinated some red onions in a bit of sugar and red wine vinegar. The vinegar condiments make a nice balance with the meat, salty cheese and fresh pico de gallo!
These tortilla's are so much better than store-bought!!!!!!!!!! I was also shocked at how easy it was to make the dough! Look at the last picture again......need I say more?
